ORGANIC COCONUT SUGAR

Traceability to the source of our ingredients has always been important to the leadership of Hail Merry.  We continue to be amazed by the good folks at Big Tree Farms in Bali who supply our sustainable coconut sugar.  The good work they do to help lift up marginalized farmers and improving their lives thru Fair Trade wages, is important to us and why we are committed to using Fair Trade cocoa and sustainable organic coconut sugar.

Coconut sugar is used for the almond flour shortbread cookie crust in several of our recipes.  Coconut sugar is low on the glycemic index, not highly refined, and is amber in color.  The flavor is complex and rich just like our maple syrup.  Chef Ali also uses the coconut sugar in recipes where we seek a caramelized deep rich flavor – like our Caramel Sea Salt Merry Bites.
