  • Gluten-Free & Dairy-Free Cream of Broccoli Soup

    Are you looking to shape up and slim down for summer? This deliciously nutritious gluten-free, dairy-free Cream of Broccoli Soup makes 6 cups of soup at 100 calories per cup.  And as an extra bonus, this healthy vegetable soup may help reduce stress related molecules due to its potent antioxidant levels of Vitamin C and Beta Carotene. Research suggests that antioxidants give strong protection against the damaging effects of inflammation and oxidative stress that prematurely ages the body.     Cream of Broccoli Soup

    makes 6 cups                     prep time= 35 minutes

    1 tablespoon olive oil

    1 cup red onion, peeled and chopped coarsely

    4 cups soup stock (low sodium)

    1 lb broccoli, chopped

    3 stalks celery, chopped

    10 oz sweet potato or butternut squash, diced

    1 bay leaf

    1 teaspoon Herbs de Provence (or thyme)

    1 teaspoon fresh ground pepper

    1/2 teaspoon seas salt

    1/2 cup chopped fresh parsley

    1/3 cup coconut milk

    1/4 teaspoon nutmeg

    1. Preheat oven to 375F. Line a small baking sheet with foil. Toss the olive oil and red onion in a small bowl and then spread evenly on sheet and roast for 15 minutes.

    2. While the onion is roasting, prep other ingredients. Add remaining ingredients (except for the parsley, coconut milk and nutmeg) to a medium stockpot. Bring to boil, add roasted onion and simmer for 10 minutes, or until vegetables are tender. Cool 10 minutes uncovered.

    3. In a food processor or blender, puree soup with parsley little by little, until smooth. Pour soup back into stockpot.

    4. Stir in coconut milk, nutmeg and adjust salt and pepper to taste. Heat gently until warm and serve.

    As Chief Nutrition Officer and Director of Marketing, Claudia is busy spreading Merry's mantra about the importance of eating unrefined fats, such as the ones found in nuts, seeds, olives, coconut oil and avocado, wherever she can. Her current research correlates low fat diets to increased risk for autoimmune disease.

    Claudia has been studying and working with food for her entire life. A classically trained chef, her food philosophy is grounded by the life sciences, nutrition, and health. In 2007, Dr. Pillow received a PhD in Health, and as part of the dissertation, developed and tested a celiac disease school-screening tool. In 2010, she coauthored, Gluten-Free Good Health (Agate).  As a resource for the Gluten Intolerance Group, after serving on the Board of Directors, Dr. Pillow lectures about gluten intolerance and teaches gluten-free cooking and baking classes nationally.  When not busy with food, Claudia can usually be found enjoying time with her family, playing tennis or exploring the globe - just working up an appetite for the next meal.

  • Game Day Bash: Football Food for the Healthy Fan

    Who's playing again?  Just kidding....

    The whole country is gearing up for Super Bowl Sunday, but for many of us, "game-day strategy" has less to do with football and more to do with tackling the menu for your Super Bowl Bash.  Save your energy for your team and score points with these healthy game day recipes.

    Spiked Watermelon Pops:  Skip the heavy beer and go for this light and fun game-day cocktail.  Don't worry about spilling when you jump out of your seat for a nail-biting play.

    Green Chile Macadamia Nut Dip:  Skip the nacho "cheese"  and nosh on this tasty dip made with fresh Anaheim Chiles and macadamia nuts - loaded with Omega-3 nourishing oils!  Use carrot sticks, celery and sugar snap peas for dipping.

  • Hail Merry Thanksgiving Macaroon Gobbler

    Finally - only three more days until Thanksgiving!  At Hail Merry we are grateful for so many things, our loyal fans chief among them.  Every week we receive such lovely and reassuring emails and phone calls from our supporters, thanking us for creating delicious, healthy snacks they can eat guilt and worry free.  It's your enthusiasm and passion that drives us to fight the good fight.

     

    On that note, you may have heard we recently created some yummy new Macaroons flavors in our test kitchens (per your many requests!), and they're available in our Love All Macaroon Tin.  (In my humble opinion the Strawberry are maybe the best thing I've ever tasted and the Caramel Sea Salt are pretty darn scrumptious too.)  I decided to take the macaroons from my own Love All Tin and create this Thanksgiving Macaroon Gobbler - a vegan and gluten-free dessert option that satisfies the variety of dietary restriction at my table.

     

    This is a great project for the kiddos (mind the sharp skewers) and can keep them creatively occupied while you're busy cooking Thanksgiving dinner for twelve.  Even better?  Instead of relying on classic autumnal decorations like pine cones, acorns, or leaves, make your Gobbler your centerpiece!

     

    What you'll need:

    • Wooden Skewers
    • Your base: I went with a melon but you can also use a watermelon, cantaloupe, squash or pumpkin
    • Your fruit: I chose strawberries, pineapple and grapes because they are my favorites and I liked the color scheme, but you should choose whatever appeals to you and your family.  Melon balls, oranges, apples, pears and bananas all work well, but I would steer clear of raspberries, blueberries and kiwis - they tend to fall off the skewers
    • 1/2 pear (his head)
    • Whatever you have around the house to make his eyes and gobbler - I used dried apricots and a piece of a strawberry
    • Toothpicks

    1.  Choose your color scheme and skewer your fruit and macaroons.

    2.  Build your base and your face: I used a melon and stabilized it with the leftover bunches of grapes.  Cut your pear in half, flip it upside down and use the toothpicks to secure it to the melon.  I used the dried apricots in my pantry for his eyes but you could use blueberries or raisins or whatever you can find.  Same with the gobbler - I sliced a part of a strawberry but a bell pepper or anything else you've got lying around works just as well.

     

    3.  Start adding in your skewers row by row.

    4.  Continue alternating your skewers until all feathers are safe and secure and carefully move your Macaroon Gobbler somewhere safe where people can oooh and aaah at your hard work and creative genius.
