This healthy summer salad pairs Hail Merry's Cherry Hemp Grawnola and Vanilla Maple Almonds with quinoa, fresh greens and seasonal blueberries.
The Food and Agricultural Organization of the United Nations (FAO) has officially declared that 2013 be recognized as "The International Year of the Quinoa." And no wonder- this Andean "super food", is a highly nutritious, cereal-like crop that is rich in protein, antioxidants, and micronutrients. Quinoa can play an important role in eradicating hunger, malnutrition and poverty because is the only plant food that has all the essential amino acids, trace elements and vitamins, and also has the ability to adapt to different ecological environments and climates. Resistant to drought, poor soils and high salinity, it can be grown from sea level to an altitude of four thousand meters and can withstand temperatures both freezing and hot temperatures. Now that is sustainability!
Plus, quinoa's delicate nutty flavor is a perfect food to include on a gluten-free diet, since it not only lacks gluten but doesn't even belong to the same plant family as wheat, oats, barley, or rye. Try this delightful salad at your next meal to Feed Your Family Royally!
Blueberry Rainbow Parfait Salad
· 2 cups water
· 1 cup dry quinoa
· 4 cups fresh mixed greens
· 1/2 cup fresh blueberries
· 1/2 cup Hail Merry Cherry Almond Hemp Grawnola
· 2 Tbsp. Hail Merry Vanilla Maple Almonds
· 1/4 cup extra virgin olive oil
· 3 Tbsp. balsamic vinegar
· 1 tsp. freshly squeezed lemon juice
· 1/4 tsp. sea salt
· 1/4 tsp. freshly ground black pepper
· 1/4 tsp. finely chopped fresh cilantro
1. Bring water and quinoa to a boil in a small saucepan. Reduce heat, cover and simmer for 15 minutes or until all water has been absorbed. Remove from heat; set aside to cool.
2. In a large bowl, combine remaining ingredients; gently toss to combine. Add quinoa and toss once.
3. Serve chilled.
