Raw & Vegan Recipes: Lazy Summer Apple, Carrot, and Ginger Smoothie

Do you believe in the benefits of juicing but hate the cleanup? Here is the ultimate lazy girl (or boy) solution for fresh morning juices without the fuss: buy fresh squeezed carrot and orange juice at your local grocer or natural health food store the day before. Freeze the carrot juice in an ice cube tray. Have a good night sleep.  Wake up and whip up some fresh raw apple, carrot orange and ginger juice in your blender. Add a handful of fresh mint or parsley for a more earthy flavor or a cup of baby spinach to get your glow on.  Enjoy with a handful of Hail Merry Grawnola for a complete meal with heart healthy plant protein and fats. This fresh beta-carotene, anti-oxidant rich raw and vegan juice helps cleanse the body of toxins and the abundant plant enzymes keeps the body functioning at optimum capacity.  In no time at all you will feel more energized, lighter and better but that doesn’t mean you want to spend your time cleaning juicers. Apple, Carrot, and Ginger Smoothie

Makes 1 serving

1 cup fresh carrot juice
1 green apple, peeled, cored, and chopped
1 inch ginger root, peeled
1/2 cup freshly squeezed orange juice
1 cup fresh baby spinach leaves (optional)

1/4 cup fresh parsley or mint (optional)

1. The night before, freeze carrot juice in an ice cube tray.
2. Next day: combine carrot cubes with remaining ingredients in a blender, and blend until smooth. Enjoy!
