Watermelon-Fennel-Mint Chiller

Makes 2 servings
Prep Time: 10 minutes
4 cups cubed watermelon
1/2 cup chopped fennel, white bulb only
1/3 cup loosely packed fresh mint
1 ½ cups ice
Sweeten to taste if needed
Place all ingredients in a blender and process till frothy. Serve immediately.
Health Note. Watermelons contain more lycopene than tomatoes and are also an excellent source of vitamin C and beta carotene and can help improve kidney function.
